On February 2, we will celebrate Candlemas. So yes, the crepes party !



A little back in time


While this festival is originally pagan and latin, pancakes appeared in the tradition when Pope Gelasius I was distributing crepes to pilgrims arriving in Rome. The crepes recall the round and yellow shape of the sun, which thus evokes the return of spring.

Celevrating candleliget is also at home, and sometimes it’s much better! So, I’ll give you the recipe of Cyril Lignac presented on his program Tous en Cuisine.


Cyril Lignac’s crepes suzette !


Little informations:

  • Preparation time : 15 minutes

  • Cooking time : 10 minutes

  • Recipe for 4 people

Les ingrédients :

For the crepes batter:

  • 300g flour

  • 3 eggs

  • 2 tbsp. Oil soup

  • 70cl of whole milk

  • 3 tbsp. of sugar

  • 5 cl of orange blossom

  • 1 orange zest

Suzette butter :

  • 100g of softened butter

  • 1 orange zest

  • 1 orange juice + 1 lemon juice

  • 15g icing sugar

  • 5cl of Grand Marnier (optional)

Finishing :

  • 25g butter for cooking

  • Neutral oil

  • 1 orange peeled and cut into thin slices or supreme

  • Some candied zest (optional)

We move on to preparation:

  • Mix the flour and sugar in a bowl, gradually add the eggs, oil, milk and orange blossom, then add the orange zest using the micro plane grater. Leave aside to rest while making the Suzette butter.

  • In a bowl, place the softened butter, pour in the orange juice and lemon juice, mix with the Maryse, add the orange zest, mix again, add the icing sugat and then the Grand Marnier if you wish. Put in the fridge.

  • In the hut crepe maker, pass an oiled paper, pour the crepe batter, form a golden crepe on both sides. Add a knob of Suzette butter and let it melt. Fold the crepe in four. Finish with a few slices or orages segments and some candied zest if you wish.
